I've heard it said that when life hands you lemons, make lemonade. Well, what if life hands you an abundance of spaghetti sauce? This is what happened to me the other day. We were planning on having about 14 people for dinner so I decided to make spaghetti. I was very diligent and made my sauce two days ahead of time only to have the dinner canceled due to illness. Our company asked for a rain check so we planned for the next week. (Then we got sick and have yet to do the dinner. Maybe this week.) Anyway, I decided to go ahead and freeze my sauce so I could pull it out whenever we got around to doing the dinner. Now remember, we are talking 14 people here so that means a lot of sauce. I had the perfect container to freeze it in; an empty 5 quart ice cream bucket. It almost fit perfectly. I just had a little sauce in the bottom of my pot and I didn't want it wasted. (We must be frugal ya know.) So, what to do, what to do. Aaa ha! I've got it! It was about lunch time so I checked around in the fridge to make sure I had everything else I needed and made these.

Love these little pizzas! They are perfect for kids too! I used to sneak purred veggies into my sauce for T, she wouldn't eat veggies for a long time. These were always a great way to get her to eat the fortified sauce.
